Eve’s Summer Salad

Spinach & strawberry salad

1 pint strawberries (in Ireland this would be 2 cartons)

2 bunches spinach leaves (2 pre-packed bags) stalks removed

For the Dressing:

1/2 cup sugar

1/4 teasp. Worcestershire sauce

2 teasp. Sesame Seeds

1 teasp. Poppy Seeds

1 1/2 finely chopped onions

1/4 teasp. paprika

1/2 cup olive oil

1/4 cup cider vinegar

Blend the first six salad dressing ingredients together in a bowl.  Drizzle the oil and vinegar into the bowl, in a slow, steady stream.  That’s it!! How simple is that?  No excuse for not trying it, I promise you that you will love it!

(Eve actually suggests that half the amount of sugar will do, so see what works best for you – we made it cutting the sugar in half and it was still delicious).

Just before serving, assemble the salad by layering the spinach with a layer of strawberries, then drizzle the dressing on top, followed by another layer of spinach, then strawberries & more dressing.

Made this salad yesterday it was delicious. I used balsamic vinegar instead of cider vinegar and tossed in flaked almonds too.

Please, please, please will you put up a Christmas dinner recipe, I know the two of you are brilliant cooks so if you can improve mine on Christmas day I would really appreciate it. I am going to make all the ones you have online so far but I reckon you should add a few slimming world recipes for the new year seeing as most people go on diets as a news years resolution !
