All you have to do is submit your favourite summer recipe to us! It could be an age old family recipe or something that you’ve created or adapted from another recipe for yourself. My favourite food , so far this summer. Is potato salad. I boil the small potatoes from our garden! Then when cool add mayonnaise and a spoonful of co-op ‘s best wholegrain mustard. Chop up a few fresh chives ( neighbour grows them) and voila! Simple but delicious .
You will need:
1 quarter strawberries, hulled
1 banana, broken into chunks
2 peaches
1 cup orange or peach or mango or apple juice
2 cups ice
Directions:
In a blender, combine strawberries, banana and peaches.
Blend until fruit is pureed.
Blend in the juice.
Add ice and blend to desired consistency.
Pour into glasses and serve to enjoy in the sun
My favourite summer dish is my famouse pine nut pasta.
Ingredients:
1 bag of pine nuts
1 clove garlic
300g pasta (Napolina wholegrain is my fave)
olive oil
half a red onion
20 mushrooms thinly sliced
1 red pepper
for pesto: olive oil, white wine vinegar, 2 cloves of garlic, fresh basil, salt & pepper, tomato puree
garnish: some grated parmesan and fresh basil
spray a tray with oil and place the pine nuts in the over for 20 minutes on a low heat
In a pan, saute in olive oil, the red onion and garlic, gradually add the thinly sliced mushrooms and red pepper
in a large pot cover the pasta with boiling water and boil
When pasta is soft to taste drain off the excess water and churn in the sauteed vegetables and pine nuts
to mate the pesto: mix 5 tablespoons of extra virgin olive oil with two tablespoons of white wine vinegar, mix in the pressed garlic, tomato puree chopped herbs and seasoning. Stir vigarously until consistency is light
stir pesto into pasta and mix together with your hands.
garnish with some extra pine nuts and grated parmesan and finish with a basil leaf.
Best served with salad, garlic bread and a glass of your best chilled vino – al fresca!
